Eating healthy does not have to be complicated, time consuming or expensive. Roufia Payman and a Chef will demonstrate some of her healthy and inexpensive recipes that you will want to use time and again!

Roufia Payman, CDN, is the Supervisor of Outpatient Nutritional Education at Northern Dutchess Hospital. Roufia leads the New Leaf Program, Get Real Weight Results Program, Fun Food and Fitness Program and the Bariatric Support Group all through the Rhinebeck campus. Ms. Payman has also worked on several healthy community initiatives including program changes within the Red Hook, Rhinebeck and Hyde Park school systems. She is also a guest columnist for Hudson Valley Parent and the Topricin magazine and has been featured in several news outlets throughout the region. Fight Childhood Obesity with a Healthy Lunchbox: 10am-11am

With a rise in the number of overweight children, parents must be extra vigilant when planning meals. Understand some critical components regarding the fight against childhood obesity and how packing a lunch can be less expensive and healthier. Julia Elliott, mother and grandmother, will share some valuable tips and recipes that will help battle this rising epidemic.

Julia will explain and demonstrate how to make healthy lunches, controlling the salt, sugar and fat that is found in some of the pre-packaged foods. She will also provide methods to promote your child's interest in eating healthy lunches, offering tools to help avoid the risk factors for cardiovascular disease, high cholesterol or high blood pressure, and childhood obesity.

Heart Healthy Salads with Summer Dressings: 11am-12pm

Joing Bruce Paley, Chef and proprietor of the Bowery Dugout restaurant, and learn how to prepare poached atlantic salmon with yougart dill dressing, grilled shrimp montreal with sundried tomato vinaigrette, grilled chicken with strawberry vinegarette, and a chef salad on mixed greens with fresh vegetables and bean garnishes.

Chef Bruce began his career in the Kingston area in 1973 when he opened Paleys' IGA super market. He is a graduate of the NYCCC Hotel and Restaurant program with Chef Of The Year Honors as well as a graduate of the Food & Maritime trades High School in Manhattan also with Chef of the year Honors.

Lisa Woodrum- Lisa has always struggled with weight and found the struggle to be increasingly difficult after having three children. After many years of allowing her weight to diminish the quality of life, she began to learn how to eat healthfully and exercise regularly. As a result of this lifestyle change she has lost 75 pounds and is now an Independent Team Beachbody Coach. She aspires to inspire as many people as possible to find the power to be the healthiest and best version of themselves.

Lynne Howell- Lynne is an Independent Team Beachbody Coach and has been using the fitness programs and Shakeology to get in the best shape of her life and help others to do the same.
