Makes about 10 servings, ½ cup each.
Grated vegetables are used in this tasty side dish. You may use any mix of vegetable. It can be served as a spread too with crackers.

1 head cauliflower

2 carrots

(2 cups green peas)

1 tablespoon oil
- Seasonings:1 teaspoon mustard seeds
- 2 teaspoons Urad split without peel dal
- ½ teaspoon red chili powder
- 1 teaspoon crushed ginger
- 2 teaspoons salt
- 2 teaspoons lemon juice
- Garnish: 1 tablespoon chopped green coriander leaves
Trim and grate the cauliflower and carrots. Heat the oil in a skillet on medium-high heat. Add mustard seeds. Cover the pot. As soon as the seeds start to pop, add the Urad dal. Add the remaining seasonings except lemon juice. Stir for a few seconds until âdal' is golden brown.
Stir in the grated vegetables and peas. Cook until they are tender but crisp, 5-10 minutes. Mix in lemon juice. Serve hot, garnished with green coriander leaves.
Variation: Use other vegetables such as cabbage and turnips. May also add grains like quinoa.
